After failing miserable to get a docker image to work correctly (due to my lack of experience mainly), I have settled on an alternative method, which thus far, over several weeks of testing, seems to be reasonably solid.
Following the instructions on the this site;
It turned out easier that I thought. Worth a try if you wish to maintain a standard base system and then have the option to swap out different OS or app versions for testing.
