What would be my job(s) as a moderator, other than deleting spam?
From my perspective as someone with the role, that’s probably the single biggest thing. I’ll reach out to someone else on the community team to see if they can share more details.
Speaking from my experience as one of the mods, spam moderation is what I spent the most time while moderating Discourse. The other part would be to correct topics, as well as to take action on requests from other users (for example, request for account merging, thread deletion, etc).
